The making of Märzen (March beer) historically began in October, to give the beer time to ferment in cool conditions and to be ready by March. Beer cellars were hidden from the sun by large chestnut trees so that it would not warm up the cellar and beer in it. That is how the leaf of chestnut has found its way to Märzen's label.
